Serves 2–3

Ingredients

  • 10g dried snow mushrooms (Tremella fuciformis), soaked 2–4 hours or overnight
  • 2 tablespoons dried goji berries, rinsed
  • 4–5 dried jujube dates, pitted and halved (optional)
  • 1 tablespoon rock sugar or honey, to taste (optional)
  • 4 cups water

Method

  1. Rinse the soaked snow mushrooms, trim the firm yellow base, and tear into bite-sized pieces.
  2. Bring water to a boil; add mushrooms and jujube dates. Reduce heat, cover, and simmer 1 to 1½ hours, stirring occasionally, until silky and gelatinous.
  3. Add goji berries and simmer 10–15 minutes more, until plump and vivid.
  4. Sweeten gently if desired and stir until dissolved.
  5. Serve warm, with the mushrooms and berries spooned into the cup for texture.

  • For a thicker, jelly-like consistency, simmer longer or use a slow cooker.
